A bit over a month ago we shared a video about how to cook a pumpkin for use in further cooking as well as fresh eating. Today we wanted to share a video of how we go about baking a fall favorite – pumpkin pie!
Pumpkin Pie
Ingredients:
- 2 cups canned or frozen pumpkin, if using frozen pumpkin, thaw and drain.
- 1 (14oz) can sweetened condensed milk
- 2 eggs
- 1 tsp cinnamon
- ½ tsp ginger
- ½ tsp nutmeg
- ½ tsp salt
- 9” unbaked pie crust
Directions: Preheat oven to 300°, beat eggs, then add pumpkin and sweetened condensed milk. Mix spices & salt separately and add to egg mixture. Mix everything well. Pour custard into prepared pie crust. Bake at 300° on a lower oven rack for 30 minutes or until center is somewhat set. In your spare time prepare the streusel topping and then follow directions below.
Streusel Topping
Ingredients:
- ½ cup brown sugar
- ½ cup flour
- ¼ cup butter
Directions: Combine brown sugar and flour, add softened butter and mix until crumbly. After pie has baked 30 minutes or so spread the streusel topping evenly over the top of your pie and continue to bake on a lower rack at 300°. For the final 15-20 minutes move the pies up to the middle oven rack and bump the oven to 350°.
